Spicy Mayo Shrimp Burger Recipe

As you probably could’ve guessed by now, I just love to do crossovers between Asian & Western foods. And that’s exactly how this crispy breaded shrimp burger with spicy mayo came to be.
I love fast food, but a lot of the time it’s way better – and much cheaper – when you make it yourself. Especially if you don’t feel like having the average beef patty all the time. And, a small personal bonus, I can prepare a sauce that I’m not allergic to. 🙂

Ingredients for the Shrimp Burgers

  • 220g shrimp, cooked
  • 1 small shallot
  • 2 burger buns
  • 1 Romaine lettuce
  • 1 medium egg
  • 2 slices Gouda cheese
  • 30g all-purpose flour
  • 25g panko
  • sunflower oil
  • 20g butter
  • ground salt & pepper to taste

Ingredients for the Spicy Ponzu Mayo

  • 3 tbsp mayonnaise
  • 1 tbsp ponzu sauce
  • 1 tsp chili oil

Since seafood pairs really well with citrus, I wanted to try and add some ponzu sauce to the mayonnaise. The flavor is subtle, but together with the soy sauce in the ponzu, and the chili oil it pairs really well with the delicate flavor of the shrimp!

How to make a Shrimp Burger with Spicy Mayo

  1. Divide your shrimp into two halves. Mince one half, and dice the other half into nice, small pieces so that it’ll leave a bite. Transfer the shrimp to a bowl.
  2. Finely dice a shallot and add it to the bowl of shrimp. Then season it with some salt & pepper and add the flour. Mix everything together and add about a tbsp of water if the flour isn’t sticking.
  3. Prepare 3 shallow plates for breading the burger patties later on. Prepare one with the flour, one with a whisked egg, and the other one with panko bread crumbs.
  4. Divide the mixture into two parts for the burger patties. Shape the patties with your hand, while keeping the size of your burger buns in mind.
  5. Coat each patty evenly with the flour first, then the egg mixture, and lastly with the panko.
  6. Heat up a frying pan with enough oil so that the sides of the patties also reach the oil and get nice and crispy. About 2 inches or 5cm of oil should be enough. Once the oil is nice and hot (you can always check with a toothpick or a wooden kitchen utensil, if it releases bubbles, it’s ready) fry your patties for about 4 minutes on each side until they’re crispy & golden brown.
  7. In the meantime, combine the mayonnaise, ponzu sauce, and chili oil in a small bowl to create the sauce. 
  8. Slice the buns in half and spread some butter on them. Then toast them in a frying pan or on an electric grill until they are golden brown.
  9. When the shrimp patties are done, transfer them from the pan, onto a wire rack (or a plate lined with kitchentowels) and immediately place a slice of cheese on top of each patty so that it slightly melts. Leave the patties on the rack while you prepare the buns.
  10. Spread a generous amount of the spicy mayo on both sides of the toasted buns. Place some lettuce on top of the bottom half of the bun. Place the shrimp burger on top of the lettuce and finish your burger.
  11. Your shrimp burger is ready to be served. Dig in!
