Baked Brioche French Toast with Banana Recipe
I personally don’t eat a sweet breakfast that often, but when I do, French toast is definitely one of my go-to breakfasts. And after my previous French toast recipe was so well received, I was stoked to try and come up with a new one!

Ingredients
- 25g butter
- 400g brioche
- 2 bananas
- 3 medium eggs
- 120g ricotta
- 80ml heavy cream
- 4 tbsp brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- pinch of salt
It was my first time trying it, but I loved using the brioche for my French toast. Even after baking it, it was still really fluffy and airy! Combined with the ricotta and mashed banana in the mix, there’s a nice balance between the subtle and creamy flavors in the bread itself and the sweet and crunchy bits on the crusts. Absolutely delicious, and a great breakfast to motivate you to get out of bed during cold days.
How to make Brioche French Toast from the oven
- Melt 15g of butter in a small saucepan on the stove, or in a mug in the microwave.
- Grease your oven dish with the melted butter.
- Cut your brioche in slices of about 1 inch or 3 cm thick.
- Combine your eggs, 1 banana (break it into a couple of pieces), ricotta, heavy cream, 3 tbsp of brown sugar, vanilla extract, cinnamon, and salt in a bowl, and mix well.
- Submerge each piece of bread into the egg mixture. This is easily done when you place them into a baking tray and pour the mixture over them. Let them sit there for about 2 minutes to give them time to soak up the mixture.
- Carefully remove the slices of brioche from the baking tray and arrange them into your greased oven dish. Then pour the remaining mixture over the slices.
- Cover the oven dish with tin foil and put it in the refrigerator for 30 minutes to give the brioche some more time to soak up the egg mixture.
- In the meantime, cut your remaining banana into thin slices.
- Preheat your oven to 350°F or 175°C.
- After the 30 minutes have passed, take your oven dish out of the refrigerator, and remove the tin foil (but save it for later on).
- Carefully slide slices of banana between the slices of brioche and place some on top. Sprinkle another tbsp of brown sugar over it all, and it’s ready to go into the oven! Bake the French toast in the oven for about 45 minutes in total. Keep checking on it every now and then, and if it browns too fast, cover it again with the tin foil.
- After 10 minutes into the baking process, brush the top of your French toast with the remaining butter.
- After the French toast is done baking, take it out of the oven and let it cool down for about 10 minutes. Now you’re ready to serve, enjoy it!
